Last week, we looked at how to make our own pumpkin puree. This week, I want to introduce you to a delicious pumpkin bread recipe!
1 cup real butter, softened
3 cups organic sugar
3 free range organic eggs
3 cups flour (your choice)
1 tablespoon aluminum-free baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground nutmeg
16 oz fresh pumpkin puree
In a mixing bowl, cream together butter and sugar. Add eggs and mix well. Combine dry ingredients; stir into creamed mixture until just moistened. Stir in pumpkin. Grease two 9-in. x 5-in. x 3-in. loaf pans with butter and pour in mixture. Bake at 350 degrees F for 1 hour or until bread tests done. Enjoy and share with your neighbors!
